A cafeteria named Potager (French for "home garden") opened at Mitsui & Co.'s "East Cafeteria" in Otemachi, Tokyo, from November 12th to 14th.

This was part of a caravan initiative by Aim Service, which operates school lunch programs, proposing original lunch menus using only vegetables to employees and students at corporate and university cafeterias. It was conducted in collaboration with Up Table, an affiliate of Dentsu Inc. specializing in food-related planning and production. The menu was supervised by Ayaka Kakizawa, owner and pastry chef of the vegetable dessert specialty shop "Pâtisserie Potager."

Chef Kakizawa attended the opening day. The main dish, "Taro and Seaweed Croquette," drew long lines at the counter due to its taste and texture, which could easily be mistaken for oyster fries.

Aim Service plans to continue similar caravans in various locations and is exploring venues where Patisserie Potager can be established as a permanent corner.
